6. Ode to Tofu

Many elements can make a dish, but texture plays the most major role in my cuisine. This is why I fell in love with tofu. Most people find tofu rather bland and boring, so it became my mission to prove them otherwise. It’s fun to marry a common ingredient with a luxurious one, so I combined black truffle with tofu and added a caramelised tofu essence to intensify flavours while lightening the mouth-feel with fresh herbs.
